I was thinking I wanted to lose a few pounds, you know, shed the extra winter weight that inevitably comes from too many lethargic nights on the couch when it was -38C and the wind was whipping by my windows at 60 km/h.

It’s tough to get out of a comfortable routine, especially when you fully comprehend the new routine will require getting your arse off the couch and making it do some exercise.  I start each day with the best of intentions and then somehow the bad habits are happening before I even realize it.

Facebook has been a bit of a thorn in my side lately.  Were it not for posting my blog to it as frequently as possible, I would probably eradicate its evilness from my life.  But then I saw this in my Facebook news feed……

….possibly the best motivational tool for weight loss I have seen yet.  While it is highly improbable, no, completely preposterous to imagine I would even attempt to dress like that, let alone go out in public, this glaring reminder of shrinking clothing versus expanding fat cells slapped me in the face.

Next time I feel the need to snack on that late night popcorn or make that relatively innocent cream sauce for my chicken this image will gallop to the front of my cerebral cortex and blind me with its perceptual awareness.  Salad anyone?

You wear what you eat…

My friend Sandra passed away tragically in May of 2003.  It was such an extreme shock to get the phone call that she never made it home from her vacation in England.  She had been infected with the Streptococcus bacteria that rapidly turned into the Flesh Eating Disease.  In a few short hours after getting on the plane to return home, she was gone.

Her laugh still echoes in my head sometimes.  She had a wonderful sense of humor, a biting wit that matched well with mine and she was just fun to be around.  We both loved to cook and there were many food experiments done in our kitchen when we shared an apartment in Halifax.  We enjoyed cooking together so much that we eventually started a small catering business.

Recipes were followed or created, heavenly smells wafted under our door into the hallway and many bites were nibbled in order to perfect those recipes.  As we noshed on the fruits of our labor, scattered bits of food would inevitably fall onto Sandra’s chest.  She was a well-endowed woman and she always referred to her cleavage as the “continental divide” because everything would end up there eventually.

As I was making my coffee this morning, I casually looked down at the sweatshirt I am wearing and noticed the stain directly at the entrance of MY continental divide.  I heard Sandra’s laugh before my laugh passed my lips.

Some memories will always find their way back to the present and those are the ones you never want to forget.

It ain’t a party until something gets celebrated

I love having a project.  I get really excited about planning a function and making as many things as I can myself.   I planned every part of my wedding down to the finest detail.  I made my own wedding cake and created a wedding cookbook for our guests.  The people who were at our wedding said it was one of the best parties they had been to and talked about it for months after.

I had never been on Pinterest until about eight months ago and now I am addicted.  It has given me so many great recipe ideas as well as crafts and decorating ideas.  Where was this site when I was in my planning stages for my wedding?  Regardless, I have certainly made up for lost time.

My brother’s 50th birthday is rapidly approaching and I am excited to be at the helm of the organization committee, which will mostly be me but that’s the way I like it.  I have been relentlessly surfing Pinterest for some great ideas,  collecting photographs and creating an epic slide show on Power Point.  I have chosen to only pick the relatively innocent photographs since my 50th will follow in four short years and I want to stay on his good side!   (James, read that line over again and let it sink in)

There are so many great ideas I have saved and now I have to sort through the best of the bunch to choose which ones will work for the party.  I am excited to have all of our friends gathered together again to celebrate the half century my brother has been on this revolving planet.  He truly is one of my best friends and I can’t wait to help him celebrate the past 50 years and help him prepare for the next 50.

 

Hearing the most important voice

I did something yesterday that I sincerely hope I remember to never do again – I bought a fully processed and synthetic lunch because I had failed to prepare my own.  What seemed like a good idea at the time came back to haunt me a few hours later when every part of my body screamed in disgust.

Recently I have been very smart about my food choices.  With only the occasional “treat”, I have been preparing all of my own meals so I know exactly what my body is ingesting and I have really enjoyed cooking again and experimenting in the kitchen.  The only processed items that have passed my lips are the ones that I have processed myself so I know what kind of food is in my food.  My body made it abundantly clear today that it will no longer put up with my bad choices and laziness when it comes to preparing my own meals.

It is simple to adhere to a proper diet when you take a few moments to prepare in advance.  I love when I have a full day in the kitchen and am able to think ahead about what I want to use to fuel my body for the coming week.  I make all of my own soups and freeze them so I am not overwhelmed by the hidden sodium and preservatives in canned soups.  I make ‘Salad-in-a-Jar’ for each day of the week and sometimes even prepare sectioned grapefruit or ‘Refrigerator Oatmeal’ for breakfasts.  It takes the guess-work and stress out of having to prepare meals each morning for the work day ahead and it can prevent those bad choices when you are hungry and pressed for time.

Salad in a jar was an amazing discovery for me.  I bought a case of Mason Jars and made a week’s worth of salads for lunch.  Each day I opened a jar onto a plate, the lettuce was still crisp and it was a quick way to have a healthy lunch.  For those of you who may have heard of these but never tried them, I urge you to buy some jars and spend and hour on the weekend making your lunches for a week.  Knowing those go-to lunches are always there during your work week will alleviate the stress of wondering what you will eat at the office and you can add any ingredients you like to your salad.

I listened to my body today and got the message loud and clear.  I’m not 25 anymore.  I can’t just eat what is available and go about my day without ever giving it a second thought.

Your body’s voice is the most important voice you will ever hear and you should heed its advice.   It will be more honest with you than any of your friends or your family and only has its best interest at heart.

 

A couple of days, a couple of changes and a couple rays of hope

I ratted myself out in my post two days ago.  I haven’t been paying attention to my health by way of my food choices ergo I haven’t been paying attention to my overall wellness.  It’s amazing how quickly the wrong foods can wreak havoc on a human body.

The scientific make up of the human body is amazing.  It knows how to properly digest and use the correct foods and it has the hidden knowledge to be able to store “food” it doesn’t recognize and deposit those “foods” into fat cells until it can figure out what to do with them, which will be never.  Processed foods are the biggest culprits and those seemingly benign ingredients you cannot pronounce are the worst offenders.

It’s so easy to walk into the grocery store and purchase a pre-packaged dinner that you can just pop into the oven and eat thirty minutes later.  But it’s just as easy to buy some chicken breasts and throw them in the oven, saute some fresh vegetables and have a nutritious dinner in half an hour, and this meal is one your body will recognize and distribute appropriately to fuel itself.

For the last two days I have made a concerted effort to eat only food that has been prepared by me.  I control the ingredients, the amount of fat and sodium and the portion size.  I have been a champ about drinking 6-8 glasses of water and have made a pact with my dog to walk her every day after work, barring any more storms similar to The Wizard of Oz!   I can honestly say that, in this brief 48-hour period, I can feel a difference in my energy level and my mood.

My body has been trying to tell me this for while but I have been ignorant to its demands.  At least now, after feeling the effects of this minor euphoric state, I will be more cognizant of continuing this path and keeping myself the happiest and healthiest version of me.

A body at rest tends to get sick

I should have seen it coming.  I’ve been so busy at work lately that the slight tickle in my throat seemed to be nothing more than a negligible nuisance.  But after I awoke at 8:00 am on my day off my body adamantly demanded I go back to bed.  I woke up again at noon.

I experience this phenomenon every autumn.  All of the stress and long hours are negated by my focus on my job.   Once that stress has subsided and the weekly hours begin to wane, my body seems to implode and every slight sign of sickness I had previously ignored comes at me with guns blazing.

Our bodies are amazing machines.  Every summer season I can completely ignore the signs of illness.  Each day I can get out of bed and put in my 8 to 12 hours a day with nary a symptom of infirmity.  But as soon as I allow my body and mind to relax, the wall crumbles and the army of germs march over the rubble to make a direct hit.

I can only say how glad I am that I spent several hours yesterday afternoon making a couple of homemade soups.  A little Broccoli, Kale and Avocado soup should help cure what ails me!

Let the hibernation commence

Winter has officially arrived, maybe not in terms of the winter solstice, but the white stuff looks like it is here to stay.  And with the first sighting of snowflakes my gut reaction is to forage for and store food. Although my foraging consists of pushing a cart up and down the aisles of the grocery store I still tune into the barbaric voice in my head that urges me to gather my supplies for the upcoming onslaught of nasty weather and get ready to hibernate.

Taking full advantage of my opposable thumbs, I turn that cart full of goodies into homemade soups, chili and stews so I can be self-sufficient during those times when the roads are closed, the snowflakes won’t stop falling and venturing out in the open world is ill-advised.  The picture below is my actual house during a two-day barrage of snow last winter.

Animals hibernate out of necessity for survival.  Humans hibernate because it’s cold outside.  Having lived all of my legal driving life in a rural community I am well-versed at driving in treacherous conditions.  Given the choice between practicing my defensive driving skills or laying on the couch with a steaming bowl of homemade soup, I’ll take the soup any day.

My freezer is now stocked with Cauliflower, Pear and Aged Cheddar soup, Broccoli and Stilton soup, Cream of Mushroom soup, Corn and Bacon Chowder with Shrimp and Chili that has been made with bacon and some dark chocolate.  (judge if you will, but it’s delicious).  There may be a few more additions to the soup list if I feel creative any time soon but, for now, I’m ready for you Old Man Winter.

Perhaps I have been stuck in this hotel room for too long and am beginning to lose my mind, or maybe this trip down memory lane was just the journey I needed to lighten my mood.

I will preface this post with a small back story.  I used to work at a hotel years ago and the Executive Chef and the General Manager, both from England, were a lot of fun to work with.  After working long hours and busy shifts together we all became friends.  We would spend our down-time after our dinner shifts by sitting the Chef’s office drinking Port and eating Stilton on Rice Crackers.  Ah, the good old days.

It was during one of these evenings that I revealed  how much I liked to write poetry.  They were intrigued and asked many questions about the type of poetry I wrote and the subject of my poems.  I could not really pinpoint a common theme because I wrote about anything that struck me as worthy of writing about.  It was then the gauntlet was thrown.  Between the two of them, they would choose a subject and I would have to come up with a poem worthy of both of their praises.  The challenge was on.

I arrived at work the next morning to a very official looking envelope on my desk.  The content of that envelope was my writing challenge.  Knowing these boys as well as I did, I opened the envelope with a bit of trepidation.  Written on a piece of hotel letterhead was nothing at all what I expected to find.  It was a recipe.  They wanted me to write a poem from a recipe and, judging by the smug looks on their faces, they fully anticipated failure on my end.

I took the recipe home and vowed that I would emerge the victor.  I wrote, rewrote and when I was satisfied with my final product I took my own piece of letterhead, printed my effort on that letterhead and put it in an envelope, leaving it on the Chef’s desk for his perusal when he returned the next day.

You’ve no doubt heard the term radio-silence.  That is what work was like for the next 24 hours.  The boys said nothing.  I was too proud to ask what they thought and waited patiently until they finally broke the silence and handed me a full bottle of 25-year old Taylor Port.  They had conceded.  I had won.   Here are the methods of the recipe and my poetic adaptation in italics:

MOUSSELINE OF MUSKOKA MAPLE SYRUP

Method:

Mix the egg yolks and sugar together and stir vigorously until it becomes white and creamy.  Add the maple syrup and, in a bowl, stir over a pan of hot water, stirring constantly as you go.  When the mixture thickens, take it off the heat and set aside to cool.  Add the gelatine leaves while it is still warm and stir.  Fully whip the cream and fold it into the cool syrup mixture.  Then half whip the egg whites and fold them into the mixture.  Place in the fridge for 1 hour and serve with the Lime Coulis.

Mix the yellow, let it mellow, in a bowl with sweet, Add the syrup, gelatin and water, stir over a pan of heat.

When it thickens, give it a lickin and take it off to cool,  Whip the cream, and fold it in, don’t eat it yet you fool.

Take the whites to make it right and add those in as well, Put this in the fridge to cool and your mousse is done pray tell.

LIME COULIS

Combine lime juice, orange, sugar, cinnamon and water and cook for 20 mins.  Run through fine chinois and add lime zest.  Return to heat for five minutes and then chill.  Pour over the mousseline and top with dark chocolate shavings.

Combine the stuff, although it’s rough, and simmer on the stove, Leave out the zest, as this is best, cook for 20 mins by jove.

When this is done, through fine chinois it will run, and then you add the lime, Return to heat, til 5 minutes is beat, and then you’re out of time.

Chill the sauce, this is boss, then pour over the mousseline, Top with choc, you’re ready to rock, dig in with spoon until clean.

Over forty and feelin’ fine

Age can be a fickle creature.  Being over forty has radically affected the way I eat and what I choose to ingest.  I began a new, healthy lifestyle two years ago – no more processed food, nothing that I thought could harm my body.   If I can’t pronounce the ingredients, they are not a part of my food selection.  Those simple four and five syllable additives that I thought were harmless were doing my body a supreme injustice.

Once I made the decision that I, and I alone, would be the only one to create the ingredients I absorbed and not rely on pre-packaged meals, I immediately noticed a spike in my energy.  My body was not wasting precious moments of efficiency trying to break down those foreign particles I had been ingesting for so long and figuring out where to store them if they were unbreakable.  Because my body was only required to process real foods that it recognized and could break down easily, it affected not only my weight but my skin and my general sense of well-being.

We have to know our bodies, know what is a normal feeling and what should send up red flags in our comfort level.  If you are in your fourth or fifth decade, your body will start to turn on you.  That truth is inevitable.  The foods that you loved for oh so long, will become the enemy.  Those pre-packaged meals that are so convenient to buy are conveniently stored in your fat cells because your body will not recognize the preserving ingredients as food. There will be more of a discomfort after eating and there will be a general feeling of lethargy.

As we age, our food choices become far more important.  I am now very cognizant of not only the ingredients, but the foods themselves.  Natural foods serve a greater purpose than just nourishing our bodies.  The correct foods can help stabilize our blood sugars and ensure that our organs are working to their optimal level.

With my 45th birthday creeping around the corner, I must strive to maintain these ideals.   Sure, there is the occasional misstep in the new food regime (especially during the summer), but I am made painfully aware by my body that I made a bad choice.  There will be things I refuse to give up – like my morning coffee – but I have replaced a few of those cups of Joe with water and lemon.  I have fallen off the food wagon a few times over the last few months and my body has sent nasty reminders making me all too aware of my bad choices.

Aging is unavoidable but now that I have learned to listen to what my body wants and needs, I am going to give everything I have to make that process last as long as possible.   The lemon is in the water and the whole foods await.  Bon appetit!!
