You want fries with that?

When I win the lottery (note the eternal optimism) I dream of having a food truck.  Seeing this burger and New York Fries truck only placed that dream, once again, in the foreground of my reality.  Our lodge was host to a collection of guests who were attending a wedding at the golf club next door to us and this was the midnight snack truck the bride and groom arranged for their wedding guests.

My food truck dream changes fairly often.  I have thought about a soup truck with fresh-baked goods, since I love making both of those things, but after seeing this pimped out truck my idea morphed into a fine dining truck that would make the dining more of an experience in the truck rather than just picking your food up from the truck itself.

My brain kicked into high gear today and toyed with the idea of creating a fine dining restaurant on wheels, making the impossible night out possible by bringing the fine dining experience to you.  With a mock backdrop of a starry night and some great jazz, you would be able to enjoy the experience of a real date night without leaving the confines of your property.

Food courses, from Amuse Bouche to dessert, would be paired with wine and the food would be presented in a way that would please the eye as well as the palette.  I have been using myself as a guinea pig and, so far, the tests have been an overwhelming success.  Last night’s meal was bacon wrapped Pork Tenderloin served with spinach, apple, Goat cheese, crushed Pistachios and a Balsamic Reduction and I am confident this dish would be a success. (It was delicious!)

I am still waiting for the lottery Gods to smile favorably upon my new career choice.  Reservations are available but may take a few years to come to fruition based on how those lottery numbers match the numbers on my tickets.  Until then, I will continue to sample future items to perfect the menu of my food truck and hope my culinary dreams turn into a reality.  This truck, if all goes well, may be coming to a neighborhood near you!

 

 

 

A cottage in the woods

I am going to make the gross assumption that everyone has thought, at least once, about what they would do if they won a big sum of cash.  I just had a dream the other night that I was handed a cheque for $500,000.00.  When I woke up, my brain rapidly began to compile a list of my desires and the list was (not surprisingly) simple.

I want this house on a big piece of land that affords me privacy, sunsets and a vast array of nature.  I want the peepers to chirp me to sleep at night and I want the caress of the morning sun to touch my cheek while I rouse.  I want to sit on that top deck and enjoy my morning coffee while I watch the dogs chasing squirrels.  I want to glance to my right and see the roof of my garage which also houses the space I can use to dabble in wood-work.

This house has always been the house I want to build.  It is small, charming and has a big kitchen so I can cook and bake to my heart’s content.   A picture of this house is pinned to a board on my refrigerator.  Each time I look at it, I send that wish into the universe hoping that some day my wish will be turned into a reality.

Many times I have closed my eyes and pictured myself sitting in my eclectic, but not expensive, living room.  The candles on the dining room table are lit, soft music plays in the background and the smell of roasting lamb permeates every room in the house.  The wine is a perfect temperature and every now and then I urgently run upstairs to my writing room to document my latest burst of creativity.

My happiness is not waiting for me in distant geographical locations.  My happiness does not consist of collections of things.  My happiness lies within those four walls and the grass and trees that will surround it.  I want to love everything about my life, I want to live deliberately and I want to do it in this house.

I love pizza.  Once upon a time, pizza used to love me as well.  But as the decades have marched on, my relationship with pizza has become a mere shadow of its former self.  There is a feeling more akin to a contractual obligation than the heartfelt love we once used to share.  And as much as I continue to love pizza, its feelings for me still leave my heart (and my abdomen) feeling enlarged, but in a bad way.

In my quest to become healthy, I have been scouring the internet for recipes that omit the culprits responsible for wreaking havoc in my over-forty year old body.  Contrary to my belief twenty years ago, bread is not my friend.  That knowledge, combined with my love for pizza, nearly brought me to my knees.

And then I heard something in the distance.  I put my hand to my ear.  It was quiet at first, almost non-existent, but then it became louder and more distinct.  It was the angels singing….and they were holding pizza!  It was like coming home…only to no home I had ever known.  I was just taking a slice out of my oven and I knew.  I was like….magic.  Okay, so the last couple of lines slightly resemble dialogue from Sleepless in Seattle, but you get the idea…..

This “pizza” recipe is brilliant.  It has no yeast, no flour and no way of making someone avoiding bread be anything less than ecstatic.  And the taste was delicious.  For those who have not experimented with cauliflower in any way, now is your chance.  Had I not made this pizza myself, I would never have guessed it was made with cauliflower.  Here is a photo of the result and below is the recipe I found on Pinterest, with a few modifications.

 1 cup riced cauliflower, 3 cups mozzarella, divided, 1 teaspoon dried oregano, 1/2 teaspoon garlic salt, 1 teaspoon crushed garlic, 1 egg, olive oil, mushrooms, artichokes, sun-dried tomatoes.

Preparation:

Pulse one head of chopped cauliflower into chunks in a food processor until it looks like grain. Microwave the cauliflower for 8 minutes.  (I don’t own a microwave so I heated some olive oil in a pan, heated the cauliflower to medium heat, covered the pan and reduced the heat until cooked.)

In a medium bowl, stir together 1 cup riced cauliflower, 1 1/2 cups mozzarella, oregano, garlic salt, garlic, and egg. Spray a cookie sheet with cooking spray. Pat mixture out into a 9-inch circle. Brush with olive oil. Bake the crust at 450° for 15 minutes.

Top the pizza with 1 1/2 cups mozzarella, mushrooms, artichokes, and sun-dried tomatoes. (I also added parmesan cheese) Broil 3-4 minutes or until cheese melts.  I’m sure there are a multitude of toppings….including bacon….that you can add to this pizza and be completely happy with the result.

Pizza and I have rekindled our romance, on my terms, and love each other once again.  Mangia…. and enjoy.

Sometimes you just want to be the biggest loser

After many months of prolonging the inevitable torture, I am finally ready to admit it is time to be serious and get myself into summer-shape.  And by summer-shape, I don’t mean round.

It’s time to hold myself accountable for those invisible pounds that crept into my room at night and methodically attached themselves to parts of my body whilst I slumbered.  My wardrobe has begun to mock me while threatening to abandon ship.  It’s time to get a buddy and make the goal a reality.  It’s time to put the spring back in my step instead of breaking the diving board.  It’s time to get back what I’ve lost.  No, wait.  It’s time to lose….what I….got back.  Now I’m confused.

A few years ago, I went on a very noble quest to get healthy.  And that I did.  I diligently tracked my food choices and the only processed food I ate was food I had processed myself.  There was no bread involved, nothing packaged and nothing I couldn’t pronounce.  I simply ate whole, natural food and at the end of my journey I had lost fifty pounds and felt amazing.

As reality is wont to do, it came stomping in and replaced my determination with dejection.   It exchanged my willpower with weakness and it magically turned me into a shape-shifter.  I went from healthy and happy to fleshy and faking it without even putting up a fight.

Well, the gloves are back on.  I remember what it felt like to be so proud of my accomplishment.  I recall how wonderful I felt being so healthy and I wish that for myself again.  Since I began my first journey on May 1st, I shall do the same again this year.  The lemons will be stocked, the spices abundant and the determination back and in high gear.

Cooking has always been a passion so now I shall choose a much more intelligent selection of ingredients before I lift the “mystery box” and delve into the long-lost world of cooking with the right food.  I may not win a million dollars at the end of my arduous journey but I will be The Biggest Loser….or the smallest loser…..why is this so confusing??

 

 

 

A body at rest tends to fall into an exhausted coma

I think I now moderately understand the mentality of a football player when their season comes to an end.  I have spent a great portion of my time planning a party that happened on Saturday night and now, the party has come and gone, and I feel like something is missing.

I love planning events.  I love paying attention to the smallest personalized details to make the experience memorable and let the person being celebrated feel how special they are by the little nuances that appear in the party’s finer points.IMG_0266Although the week leading up to the party had a few speed bumps, the party was a great success.  From the food choice and preparation, the slide show and the soundtrack of his past 50 years, my brother was able to celebrate his upcoming milestone with great friends and family and it was a great way to honor the special place he holds in all of our lives.

After spending the entire day in the kitchen, partying like a rock star until 3:30 in the morning, being the first up at 7:30 to prepare for breakfast and spending the next day cleaning the lodge, I came home, possibly had a little “hair of the dog” and watched the end of the Masters through barely opened eyes.  I poured myself into bed at 8:00 pm and slept solidly for 11 hours.

Physical exhaustion aside, I would do it all again next weekend!  Happy 50th Jamie…..you deserve every bit of fun that party had!

 

 

 

Cooking for one doesn’t have to mean Kraft Dinner

I am the only living creature in my home who consumes “people food”.  Callaway likes to protest as often as possible which results in some fibrous vegetables going into her mouth and subsequently my ruing that decision once the foul odor of processed cucumber and lettuce assaults my senses.

Living alone has its challenges but cooking for one is not even on the list.  I love to, not just cook but, create in the kitchen.  Just because I am only cooking for myself does not mean I take the easy route and buy horribly processed pre-packaged easy to serve meals.  I opt for the more labor intensive, home-cooked, real food.

This meal took 30 minutes to prepare and was delicious.  Fresh beef, a portion of a bag of small potatoes and an onion created this tasty home-cooked meal fit for one.  It took one pan and two small pots, one for mashed potatoes one for fried, dusted onions.  The preparation was easy, the cooking process was simple and the taste was phenomenal.  The result was so much better than a store-bought meal.

Cooking for one doesn’t have to be intimidating but it does take some practice.   There are a plethora of options that are easy to prepare, that are healthy and that make great leftovers for lunch.  You can even make a full recipe and freeze it for future meals but I spoil myself most of the time and buy fresh ingredients each day.  I find I spend less money doing that than I do buying in bulk and freezing food that I may forget about and never eat.  And fresh is always the best.

An extreme tolerance for all things organized

I was chatting with a good friend about similar idiosyncrasies we have when it comes to organization and storage of many items around our homes.  I, like him, choose to have vegetables stored in the fridge with other vegetables, condiments belong with other condiments and canned goods deserve to be recognized at first glance because their labels all face outward from their designated cupboard.

Having this conversation with him made me feel normal.  What I had deemed to be slightly irrational behavior on my part, we agreed, is theoretically more of a sensible thing than a labelled disorder.  I like things to be organized.  I like the feeling of order and knowing I can find something quickly because it holds a place where it should be found.

I love to cook so having all of my food items readily available and easy to locate makes my life much easier as does my cooking method.  I learned many years ago from a very wise teacher to clean as you go.  As things are boiling or sautéing,  you can be spending those idle moments closing cupboards and drawers and cleaning the dishes that you have already used.  There is nothing worse than cooking for hours only to be faced with a mountain of dirty dishes at the end of the prep work.  This is an unnecessary evil and one that can be alleviated by cleaning as you go and potentially reusing some of those same dishes to cut down on the clean up.

The three letters OCD have been beaten into submission, rendered unconscious and left for dead.  I knew I was bordering on something that could be defined with three simple parts of the alphabet but O, C and D was not the combination of letters that I felt defined my habitual tendencies.

After careful consideration and a willingness to admit that there may be a convenient label for me, I feel comfortable conceding to the fact that I have ATD – Attention To Detail.  This affliction is not discussed in medical journals nor is it recognized as a treatable disorder but I feel confident that, given time, more people will hopefully become afflicted by this chronic need for organization and cleanliness.

The tagline of our first group meeting will be – “Put it back where it belongs and close the drawer all the way”.  We are currently taking well-written and grammatically correct submissions to become part of our team.  Applications should be double-spaced in the font of your choice (Times New Roman).

 

 

 

You wear what you eat…

My friend Sandra passed away tragically in May of 2003.  It was such an extreme shock to get the phone call that she never made it home from her vacation in England.  She had been infected with the Streptococcus bacteria that rapidly turned into the Flesh Eating Disease.  In a few short hours after getting on the plane to return home, she was gone.

Her laugh still echoes in my head sometimes.  She had a wonderful sense of humor, a biting wit that matched well with mine and she was just fun to be around.  We both loved to cook and there were many food experiments done in our kitchen when we shared an apartment in Halifax.  We enjoyed cooking together so much that we eventually started a small catering business.

Recipes were followed or created, heavenly smells wafted under our door into the hallway and many bites were nibbled in order to perfect those recipes.  As we noshed on the fruits of our labor, scattered bits of food would inevitably fall onto Sandra’s chest.  She was a well-endowed woman and she always referred to her cleavage as the “continental divide” because everything would end up there eventually.

As I was making my coffee this morning, I casually looked down at the sweatshirt I am wearing and noticed the stain directly at the entrance of MY continental divide.  I heard Sandra’s laugh before my laugh passed my lips.

Some memories will always find their way back to the present and those are the ones you never want to forget.

It ain’t a party until something gets celebrated

I love having a project.  I get really excited about planning a function and making as many things as I can myself.   I planned every part of my wedding down to the finest detail.  I made my own wedding cake and created a wedding cookbook for our guests.  The people who were at our wedding said it was one of the best parties they had been to and talked about it for months after.

I had never been on Pinterest until about eight months ago and now I am addicted.  It has given me so many great recipe ideas as well as crafts and decorating ideas.  Where was this site when I was in my planning stages for my wedding?  Regardless, I have certainly made up for lost time.

My brother’s 50th birthday is rapidly approaching and I am excited to be at the helm of the organization committee, which will mostly be me but that’s the way I like it.  I have been relentlessly surfing Pinterest for some great ideas,  collecting photographs and creating an epic slide show on Power Point.  I have chosen to only pick the relatively innocent photographs since my 50th will follow in four short years and I want to stay on his good side!   (James, read that line over again and let it sink in)

There are so many great ideas I have saved and now I have to sort through the best of the bunch to choose which ones will work for the party.  I am excited to have all of our friends gathered together again to celebrate the half century my brother has been on this revolving planet.  He truly is one of my best friends and I can’t wait to help him celebrate the past 50 years and help him prepare for the next 50.

 

Hearing the most important voice

I did something yesterday that I sincerely hope I remember to never do again – I bought a fully processed and synthetic lunch because I had failed to prepare my own.  What seemed like a good idea at the time came back to haunt me a few hours later when every part of my body screamed in disgust.

Recently I have been very smart about my food choices.  With only the occasional “treat”, I have been preparing all of my own meals so I know exactly what my body is ingesting and I have really enjoyed cooking again and experimenting in the kitchen.  The only processed items that have passed my lips are the ones that I have processed myself so I know what kind of food is in my food.  My body made it abundantly clear today that it will no longer put up with my bad choices and laziness when it comes to preparing my own meals.

It is simple to adhere to a proper diet when you take a few moments to prepare in advance.  I love when I have a full day in the kitchen and am able to think ahead about what I want to use to fuel my body for the coming week.  I make all of my own soups and freeze them so I am not overwhelmed by the hidden sodium and preservatives in canned soups.  I make ‘Salad-in-a-Jar’ for each day of the week and sometimes even prepare sectioned grapefruit or ‘Refrigerator Oatmeal’ for breakfasts.  It takes the guess-work and stress out of having to prepare meals each morning for the work day ahead and it can prevent those bad choices when you are hungry and pressed for time.

Salad in a jar was an amazing discovery for me.  I bought a case of Mason Jars and made a week’s worth of salads for lunch.  Each day I opened a jar onto a plate, the lettuce was still crisp and it was a quick way to have a healthy lunch.  For those of you who may have heard of these but never tried them, I urge you to buy some jars and spend and hour on the weekend making your lunches for a week.  Knowing those go-to lunches are always there during your work week will alleviate the stress of wondering what you will eat at the office and you can add any ingredients you like to your salad.

I listened to my body today and got the message loud and clear.  I’m not 25 anymore.  I can’t just eat what is available and go about my day without ever giving it a second thought.

Your body’s voice is the most important voice you will ever hear and you should heed its advice.   It will be more honest with you than any of your friends or your family and only has its best interest at heart.
